Begin the evening before. Put the chia seeds together with the full-fat coconut milk and water in a sealable container. Stir everything thoroughly together so the seeds are evenly distributed in the liquid. Let the mixture sit for ten minutes and then stir it again firmly to prevent lumps from forming.
Close the container with a lid. Place the mixture in the refrigerator and let it thicken overnight. The chia seeds absorb the liquid, naturally creating a thick pudding.
Take the thickened chia pudding out of the refrigerator the next morning and stir briefly. Wash the fresh strawberries, remove the tops and slice the fruit into even slices. Break or chop the pecans into coarse pieces at the same time.
Get two bowls and divide the chia pudding into equal portions over the bottom. Layer the sliced strawberries and pecan pieces on top. Finish each bowl with a tablespoon of almond butter and serve immediately.
