Add the chia seeds, coconut milk and maple syrup to a large bowl. Stir this mixture thoroughly so the seeds are evenly distributed and no lumps form. Cover the bowl with a lid or plastic wrap.
Place the bowl in the refrigerator and let the pudding set for at least four hours. Stir the mixture again after the first half hour so the chia seeds don't sink to the bottom but absorb the liquid evenly.
Meanwhile, peel the mango, remove the flesh from the pit and cut it into small, even cubes. Wash the lime, finely zest the green skin and squeeze out the juice. Toss the mango cubes in a separate bowl with the lime juice.
Remove the set chia pudding from the refrigerator and divide it among glasses or bowls. Top with the lime-dressed mango cubes and garnish with the lime zest and fresh mint.
