Mix the chia seeds, full-fat coconut milk and vanilla powder in a bowl. Stir this immediately and thoroughly until an even mixture forms. Make sure there are no lumps of chia seeds on the bottom or at the edges.
Cover the bowl and place it in the refrigerator. Let the mixture set for at least four hours, or preferably overnight, so the liquid is well absorbed and the pudding achieves a firm structure.
For serving, peel the fresh mango half and cut the flesh into equal cubes. Rinse the lime and zest the skin until you have gathered the required amount for half a lime.
Remove the set chia pudding from the refrigerator and transfer it to a serving bowl. Distribute the cut mango cubes over the top. Finally, sprinkle the dish with lime zest and coconut flakes and serve immediately.
