Clean the 500g of Brussels sprouts by trimming the stem ends and halve them. Rub the 300g of organic steak, already at room temperature, with a pinch of turmeric and some black pepper. Toast the 2 tablespoons of sliced almonds briefly in a dry pan until golden brown and set aside on a plate.
Heat a skillet over high heat and pan-sear the steak for 2 to 3 minutes per side until cooked to your liking. Remove the meat from the pan, wrap it tightly in aluminum foil, and let it rest for 5 minutes.
Meanwhile, heat the tablespoon of garlic oil in a large pan or wok. Add the halved Brussels sprouts and stir-fry for 8 to 10 minutes until they are golden brown and tender-crisp.
Slice the steak and divide it among the plates. Spoon the stir-fried Brussels sprouts alongside, scatter the toasted almonds over the dish, and finish with a sprinkle of Celtic sea salt.
