Dry-toast the walnuts in a skillet until fragrant, then break them into coarse pieces. Leave the pan on the heat.
Halve the figs and place them cut-side down in the same pan. Grill them for two minutes until the flesh is warm and lightly caramelized. Warm figs are much sweeter and more aromatic than cold ones, meaning half a teaspoon of honey is more than enough.
Spoon the skyr into a bowl and stir in the cinnamon. Skyr is strained low-fat dairy and provides over twenty grams of protein per two hundred grams, which is more than most breakfasts.
Place the grilled figs on top of the skyr, sprinkle with the walnuts and hemp seeds, and drizzle the honey over it along with a few thyme leaves. The walnuts and hemp seeds supplement the fat that skyr itself barely has.
