Crack the eggs into a bowl and beat them lightly with a whisk. Add the almond flour, half of the cinnamon powder, and the salt. Mix these together thoroughly until you have a smooth, lump-free mixture. Then gradually pour in the milk while continuing to whisk until you have a smooth pancake batter.
Set a frying pan over medium-high heat and melt the butter or coconut oil in it. Pour all the batter into the hot pan as soon as the butter sizzles. Cook the pancake for three to four minutes on one side, until the edges turn golden brown and small bubbles appear on the top. Flip the pancake with a spatula and cook the other side for another two to three minutes until cooked through.
Prepare the garnish while the pancake is cooking. Mix the full-fat curd cheese with the remaining cinnamon powder in a small bowl until smooth.
Slide the golden-brown pancake from the pan onto a plate. Spread the prepared cinnamon curd cheese over the warm pancake and serve immediately.
