Start by cleaning the large broccoli crown and cut it into small, even florets. Peel the two-centimeter piece of fresh ginger and grate it very finely. Pat the large shrimp dry with a piece of kitchen paper so they cook well and are ready for use.
Place a pan or steamer basket over the heat and steam the broccoli florets for approximately five minutes until tender-crisp. At the same time, heat the tablespoon of garlic oil in a large wok over high heat. Once the oil is hot, add the shrimp, grated ginger, and a pinch of turmeric. Cook the shrimp for three minutes over high heat until they are done and completely pink.
Remove the steamed broccoli from the heat and add the florets to the wok with the shrimp. Toss the ingredients immediately and stir-fry the mixture for exactly one more minute over high heat. Sprinkle Celtic sea salt as needed and toss everything one last time to distribute the flavors well.
Scoop the warm mixture of shrimp and broccoli from the pan and divide over the plates. Serve the dish immediately while it's still hot.
