Start by preparing the ingredients. Cut the two hundred grams of beef steak into thin, even slices. Wash the two bok choy and chop them into large pieces. Peel the three garlic cloves and mince them. Peel a piece of fresh ginger and mince or grate it finely. Mix the soy sauce, rice vinegar and sesame oil in a small bowl until well combined.
Bring a pan of water to a boil and cook the eighty grams of jasmine rice. Drain the rice and let it rest covered. Meanwhile, heat a wok over high heat. Stir-fry the beef strips for about two minutes until browned all over. Remove the meat immediately and set aside on a plate.
Briefly stir-fry the minced garlic and ginger in the hot wok. Add the chopped bok choy and stir-fry for a couple of minutes until the vegetable begins to wilt. Return the beef strips to the pan and immediately pour in the prepared sauce of soy sauce, rice vinegar and sesame oil. Toss everything well and heat through for another minute.
Divide the cooked jasmine rice among the plates. Scoop the warm mixture of beef, bok choy and sauce directly over the rice. Sprinkle with sesame seeds and serve immediately.
