Mix the chia seeds, organic full-fat coconut milk, cardamom, and pinch of vanilla powder in a large bowl. Stir vigorously right away with a fork or small whisk to prevent the seeds from clumping together.
Cover the bowl and refrigerate. Let the mixture rest for at least thirty minutes so the seeds can absorb the liquid and thicken. For a firmer consistency, you can also let it sit overnight.
Remove the bowl from the refrigerator when the time has passed and the mixture has reached pudding thickness. Stir well once more. Break the four shelled walnuts into coarse pieces and rinse the handful of organic blueberries under cold running water.
Divide the chia pudding into a small bowl or glass. Garnish the top with the clean blueberries and sprinkle the walnut pieces over the top. Serve immediately.
