Stir the ricotta loose with a fork and mix through some black pepper so it becomes spreadable and airy. Ricotta is milder and creamier than quark and still contains a good amount of protein.
Halve the cherry tomatoes and fry them briefly in the olive oil over high heat until the skins burst. This concentrates the sweetness and removes the watery taste. Roast the pumpkin seeds for the last minute.
