Grass-fed Beef Stir-fry with Cauliflower Rice

Ingredients

  • 150g grass-fed ground beef
  • 200g cauliflower rice
  • 1 red bell pepper (diced)
  • 1/2 zucchini (sliced into half-moons)
  • 1 clove garlic
  • 1 cm fresh ginger (grated)
  • 1 tbsp tamari (gluten-free soy sauce)
  • 1 tsp sesame oil
  • fresh cilantro.

Preparation

    Start by preparing the vegetables and seasonings. Dice the red bell pepper and slice the half zucchini into half-moons. Mince the garlic clove and grate the fresh ginger. Roughly chop some fresh cilantro to use later.

    Place a wok or large skillet on the heat and warm the sesame oil. Add the grass-fed ground beef and cook this over medium heat, breaking it up as it cooks. Once the meat is browned, add the garlic, ginger, bell pepper, and zucchini. Stir-fry everything for five to seven minutes, until the vegetables are tender-crisp.

    Stir the cauliflower rice into the beef mixture in the pan. Cook this together for at most three minutes, so the cauliflower becomes warm but is not mushy at all. Pour in the tablespoon of tamari and toss everything together one last time to season the dish.

    Dish the warm stir-fry directly from the pan onto plates. Garnish the dish by sprinkling the fresh cilantro over top and serve immediately.
