Pork Tenderloin with Stir-Fried Vegetables

Ingredients

  • 300g pork tenderloin
  • 800g mixed stir-fry vegetables (such as bimi
  • bok choy
  • bean sprouts)
  • 1 tbsp mild coconut oil
  • pinch of turmeric
  • Celtic sea salt and black pepper.

Preparation

    Cut the pork tenderloin into uniform strips. Sprinkle the turmeric and some black pepper over the meat and toss well. Set the mixed stir-fry vegetables, such as bimi, bok choy and bean sprouts, ready beside the stovetop.

    Heat the tablespoon of mild coconut oil in a wok or large skillet. Fry the pork strips over high heat, quickly browning them on all sides. Remove the meat from the pan and set it temporarily on a plate.

    Leave the pan on the heat and add the stir-fry vegetables. Stir-fry the vegetables over high heat for five to seven minutes until they are tender-crisp. Return the pork to the wok and toss everything briefly together so the flavors combine and the meat reheats.

    Remove the pan from the heat. Sprinkle the dish with a pinch of Celtic sea salt, divide the pork and stir-fried vegetables over the plates and serve immediately.
