Preheat the oven to 200 degrees. Halve the plums and remove the pits. Place them cut-side up in a small baking dish, dot with small pieces of butter, and tuck the star anise in between. Roast for fifteen minutes until soft and starting to caramelize at the edges.
Roasting does to stone fruit what boiling never can: the moisture partially evaporates, concentrating its natural sweetness. As a result, a single teaspoon of honey is more than enough, keeping the sugar load of this breakfast low.
Meanwhile, dry-toast the almonds in a skillet until fragrant and lightly browned in spots. Let them cool and roughly chop them.
Spoon the yogurt into a bowl and stir in the cinnamon. Remove the star anise from the dish and spoon the warm plums along with all their syrupy juices onto the yogurt.
Sprinkle the almonds and flaxseed on top and drizzle with the honey. Full-fat yogurt provides the protein and saturated fat, almonds offer healthy fats, and flaxseed supplies the fiber and lignans that play a role in maintaining a stable hormonal balance.
