Break the organic eggs into a bowl and whisk them well with a fork. Make sure the mushrooms are sliced evenly and chop the fresh chives finely in advance so all ingredients are ready to use. Crumble the soft goat cheese into smaller pieces.
Heat the ghee or coconut oil in a frying pan over medium-high heat. Add the mushroom slices and cook until they turn golden brown and all the released moisture has completely evaporated from the pan. Pour the whisked eggs evenly over the cooked mushrooms. Immediately reduce the heat and let the omelette set gently over low heat.
Wait until the top of the eggs is almost completely set and dry. At that point, distribute the pieces of soft goat cheese over exactly one half of the omelette. Slide a sturdy spatula under the uncovered half and gently fold it over the cheese. Let the folded omelette rest in the warm pan for another minute so the cheese can soften from the internal heat.
Slide the warm omelette directly from the frying pan onto a plate. Sprinkle the finely chopped fresh chives evenly over the top of the dish. Serve the meal immediately.
