Take a large bowl or big glass and add the three tablespoons of chia seeds. Pour the two hundred milliliters of unsweetened almond milk over the seeds and immediately add the half teaspoon of vanilla extract. Stir everything thoroughly together with a fork or spoon, so that no clumps of chia seeds remain on the bottom.
Place the glass or bowl covered in the refrigerator. Let the mixture soak for at least thirty minutes, or let it sit overnight. During this time the chia seeds absorb the liquid, creating a thick and gel-like consistency on their own.
Remove the set chia pudding from the refrigerator. Stir the contents again thoroughly, so that the texture is completely even before proceeding with the garnishing.
Distribute the one hundred grams of fresh raspberries over the top of the pudding. As a final step, sprinkle the tablespoon of hemp seeds and the handful of sliced almonds over the fruit and serve immediately.
