Crack the three organic eggs into a bowl and beat them thoroughly with a fork until well combined. Cut or tear the wild smoked salmon into small pieces and have the fresh chives finely chopped and ready.
Place a skillet over low heat and let one tablespoon of ghee or butter melt gently in it. Pour the beaten eggs into the pan once the fat is warm. Continuously and slowly stir with a spatula across the bottom, allowing the egg to set gradually and develop a creamy texture.
Remove the pan from the heat just before the egg is completely set; the residual warmth of the pan will finish the cooking. Now quickly fold in the smoked salmon pieces and the finely chopped chives into the warm egg mixture. Season everything with a pinch of pepper.
Transfer the scrambled eggs directly from the pan to a plate. Serve immediately so the egg does not continue to set and maintains the promised soft, creamy texture.
