Preheat the oven to 190 degrees. Cut off the tops of the organic bell peppers and save these pieces to use as lids later. Carefully remove the seeds and seed membranes from inside the peppers.
Heat the olive oil in a frying pan and sauté the finely diced onion until it becomes translucent. Add the grass-fed ground beef and cook for a few minutes until it's crumbly and browned. Season everything with cumin powder, paprika powder, a pinch of chili flakes, and Celtic sea salt. Then stir half of the fresh cilantro or parsley through the meat.
Stuff the hollowed-out peppers firmly with the warm meat mixture. Place them upright in a baking dish and put the reserved lids back on top.
Slide the baking dish into the oven and bake the peppers for 20 to 25 minutes until they begin to soften. Remove the dish from the oven, garnish the peppers with the remaining fresh herbs, and serve immediately.
