Begin by preparing the vegetables. Rinse the two celery stalks under the tap and slice them thinly on the bias. Place these pieces in a large mixing bowl.
Next, heat a skillet on the stove. Add the large shrimp to the pan along with the teaspoon of mild curry powder and a pinch of turmeric. Stir everything well immediately and cook the shrimp for about three minutes until cooked through on all sides. Remove the pan from the heat and let the shrimp cool briefly.
Add the tablespoon of sugar-free mayonnaise to the bowl with the sliced celery and stir well. Then fold in the slightly cooled cooked shrimp so everything is evenly coated with mayonnaise.
Divide the mixed lettuce over the plates to form a bed. Spoon the shrimp and celery mixture on top. Finally sprinkle the dish with some Celtic sea salt.
