Pat the fresh cod fillet dry with paper towels. Then sprinkle turmeric and black pepper over both sides of the fish and rub the spices in lightly.
Heat one tablespoon of the extra virgin olive oil in a large frying pan or wok over medium-high heat. Place the seasoned cod in the pan and fry the fish for six to eight minutes, turning once, until the flesh is opaque and begins to flake slightly.
Carefully remove the cooked fish from the pan and set aside temporarily. Pour the remaining tablespoon of olive oil directly into the same pan and turn the heat up high. Add the mixed stir-fry vegetables and stir-fry for a few minutes until crisp-tender. Season the vegetables with Celtic sea salt as you stir.
Divide the hot stir-fried vegetables among plates. Place the fried cod fillet on top and serve immediately.
